Recipe Pecan Pie Cookies
Transfer mixture to a medium bowl.
Recipe pecan pie cookies. In a large bowl use an electric mixer to beat butter and sugar until light and fluffy. Bake at 375 for 6 minutes. Unroll dough and using a 3 cookie cutter cut out circles.
Bring to a boil over medium heat stirring often and stir in the pecans until well combined. Place in muffin cups. Spoon 1 tablespoon of the pecan mixture into each circle.
Remove to cooling rack. In a small bowl whisk together flour baking powder and salt. Remove to wire racks to cool completely.
Combine pecans and 1 2 teaspoon of the salt in a food processor and pulse until nuts are finely ground about 20 pulses. Place on a parchment lined pan it s important to line it and bake 8 minutes or until filling is just set. In large bowl mix cookie base ingredients with spoon until soft dough forms.
Remove from oven and place pecan balls in center of each cookie. Bake at 350 for 9 11 minutes or until lightly browned. Beat in egg and vanilla.
Tip 1 these cookies can be made ahead and stored in the freezer up to 3 months. Cool 1 minute on cookie sheets. Cool 5 minutes on baking pans.
