Recipe Potato Garlic Soup
Saute onions for 5 minutes.
Recipe potato garlic soup. Spoon half of broth mixture into a blender. Set aside mashed potatoes and remaining potato mixture. Reserve 1 cup of roasted potatoes.
In a 3 quart saucepan heat remaining oil. Melt 1 1 2 teaspoons butter. Place potatoes carrot and garlic in a dutch oven and cover with water.
Bring to a boil. Blend until nearly smooth. Remove papery outer skin from garlic do not peel or separate cloves.
Add the peeled and roughly chopped potatoes and stock. Heat the broth garlic potatoes carrots onion celery and bacon in a 4 quart saucepan over medium high heat to a boil. Cover and simmer for 15 20 minutes or until tender.
Add potatoes and garlic and stir in broth and water. Place potatoes and onions in a single layer in an ungreased 15x10x1 in. Sauté gently for around 15 minutes until the onion has softened stirring regularly so that the garlic doesn t burn.
Cut top off bulb. Bring to boiling point then reduce heat to let the soup simmer for around half an hour. Place 3 cups potato mixture in a large bowl and mash.
